Clean Eating: Have Your Cookies and Eat Them Too


When you say "clean eating"  or "paleo" people's eyes tend to glaze over. "Oh, I could never do that, I just love [insert food here] too much." As if you are telling them they must give up everything that has flavor and just start eating a pile of cardboard. But that's not true at all.   

Paleo is a clean eating lifestyle where you eat foods that are natural, not processed, and have no added sugars or chemicals. Paleo-eaters usually refrain from gluten, dairy, soy, and legumes (beans). Now, I know, you're probably thinking "bleck, well what the hell is left?" Trust me, I thought the same thing when I first started out on my Paleo journey. But I assure you, that I have never truly tasted food before until now, and that's not just some snobby, d-bag thing that Paleo-eaters say to make you feel inferior. It's just the truth. When I think back to the junk I was putting in my body, and how crappy it made me feel (even though I didn't necessarily recognize that at the time, but compared to the way I feel now, OMG. Night and day!), I wish I would have tried it sooner!

So despite the glazed-eyes, everything-tastes-bland stigma, I'm here to assure you can truly have your chocolate chip cookies and eat them, too. I give you, Exhibit A: 

Paleo Chocolate Chip Cookies 


Preheat your oven to 375 degrees. 

In a mixing bowl, mix together 3 cups of almond meal and 1 teaspoon of baking soda. 



With a mixer, beat in 2 eggs, 1/4 cup of maple syrup, 1 teaspoon of vanilla extract, and 1/2 cup of coconut oil. 


Fold in 1 cup of bittersweet chocolate chips. OR, you could be a rebel like me and I did 1/3 cup of chocolate chips, 1/3 cup of almond slivers, and 1/3 cup of chopped almonds. Yummmmy. 



On a cookie sheet lined with parchment paper, drop rounded tablespoon-fuls of cookie dough about 2 inches apart. 



Bake for 15 minutes until the edges are lightly browned. And then, bon appetit! :)
